Portuguese Olive Varieties
Trás-os-Montes • Mirandela • Northern Portugal
Portugal is home to a diverse range of native olive varieties, shaped by regional climates and centuries of
cultivation. In Trás-os-Montes, traditional cultivars such as Madural Transmontana, Verdeal Transmontana,
and Cobrançosa form the backbone of PDO Azeite de Trás-os-Montes.

Portuguese Olive Varieties from Trás-os-Montes
Northern Portugal’s Trás-os-Montes region is one of the country’s most distinctive olive-growing areas, shaped by a continental climate, low rainfall, and predominantly schist and granite soils. These conditions create a demanding environment for olive trees, favouring native cultivars that have adapted over centuries to temperature extremes and limited water availability.
Unlike coastal Mediterranean regions, Trás-os-Montes experiences hot, dry summers and cold winters, slowing olive maturation and naturally concentrating flavour and structure in the fruit. This environment supports the production of extra virgin olive oils with balance, stability, and strong varietal identity, recognised under the PDO Azeite de Trás-os-Montes framework.
Portugal is home to dozens of olive oil cultivars, but Madural Transmontana, Verdeal Transmontana, and Cobrançosa are among the most representative of this northern region. Together, they define the character of Trás-os-Montes olive oil and play a central role in the country’s olive-growing heritage.

Madural Transmontana
Madural Transmontana is a traditional cultivar of Trás-os-Montes, historically valued for its consistency, balance, and adaptability to the region’s demanding conditions. Oils from Madural are typically smooth and rounded, with gentle fruit notes and restrained bitterness, making them approachable and versatile.
This variety is well suited to both monovarietal oils and blends, contributing harmony and softness without overpowering other characteristics. Its chemical composition generally reflects moderate levels of natural antioxidants, supporting freshness and stability when carefully produced.
Verdeal Transmontana
Verdeal Transmontana represents a fresher and more vibrant expression of Trás-os-Montes olive oil. Cultivated at altitude and exposed to strong temperature variation, this variety produces oils with green aromas, lively bitterness, and clear structure.
Verdeal oils are often associated with elevated phenolic presence compared to milder cultivars, contributing both sensory definition and oxidative stability. Traditionally appreciated for its clarity and freshness, Verdeal is well suited to oils that highlight herbal and vegetal notes.
Cobrançosa
Cobrançosa is one of Portugal’s most emblematic olive varieties and a cornerstone of Trás-os-Montes olive oil production. In this northern region, it produces oils with pronounced aromatic intensity, herbaceous character, and persistent structure.
Cobrançosa is frequently associated with higher polyphenol concentrations, contributing to its robust sensory profile and excellent natural stability. These characteristics make it particularly valued for monovarietal oils and for reinforcing structure in blends.
Portuguese Olive Cultivars
Portugal’s olive oil identity is built on regional diversity rather than uniformity. From the south to the northern interior, each olive-growing area has developed cultivars adapted to local climate, soils, and traditions.
Within this landscape, Trás-os-Montes stands out for its preservation of native varieties and traditional growing methods, protected under PDO certification. Understanding these cultivars is essential to appreciating Portuguese olive oil not only as a product, but as an expression of place, culture, and agricultural resilience.
